IQF Frozen Strawberries: What Buyers Should Know
IQF strawberries are the most widely traded frozen berry for retail, food service and food manufacturing. This short guide explains how they are made, why buyers choose them, which cut and pack fit each use, and how to keep the quality you paid for all the way to your customer.
What are IQF strawberries?
IQF means individually quick frozen. The strawberries are washed, de-calyxed, sorted and then frozen on a moving belt in a freezing tunnel with very cold air, so each berry freezes separately within minutes. The result is free-flowing fruit: you take exactly what you need from the bag or carton and close it again.
Fast freezing forms small ice crystals inside the fruit. That helps the berry keep its shape and colour and lose less juice when it thaws. IQF strawberries are usually graded by size and quality, and sold whole, diced or sliced.
How IQF strawberries are made
- Harvest: ripe berries are picked and brought to the plant quickly, while they are still firm and fresh.
- Washing and de-calyxing: the fruit is washed and the green calyx (crown) is removed.
- Sorting: soft, damaged or off-colour berries and foreign material are removed.
- Cutting (optional): berries for diced or sliced products are cut to the agreed size.
- Tunnel freezing: the fruit moves through the freezer on a belt and freezes piece by piece.
- Grading and packing: frozen fruit is graded by size and quality and packed into retail bags, food-service packs or bulk cartons.
- Cold storage: the product is stored and shipped at −18 °C or colder.

Whole, diced or sliced?
Whole berries show quality best and suit retail and desserts. Diced strawberries give an even piece size and a higher yield in production, and they mix well into dairy and bakery products. Sliced strawberries are mainly used for toppings and decoration. Storage and handling
IQF quality depends on an unbroken cold chain. Keep the product at −18 °C or colder from loading to your customer's freezer, avoid leaving pallets on the dock, and close opened packs well. For most uses, take the berries straight from frozen; thaw in the fridge only when the recipe needs it, and do not refreeze thawed fruit.

What does IQF mean?
IQF stands for individually quick frozen. Each strawberry or piece is frozen separately in a few minutes, so the fruit stays free-flowing and keeps its shape and colour.
Do IQF strawberries contain added sugar?
Usually not: standard IQF strawberries are 100% fruit. Always state "no added sugar" in your specification so there is no doubt.
Why do IQF strawberries sometimes stick together?
Clumping is caused by temperature swings during storage or transport, when the surface thaws and refreezes. Keep the product at −18 °C or colder all the way, and avoid leaving pallets on the dock.
Which cut is best for smoothies?
